Abigail Johnson Dodge's Chocolate Cheesecake Pies

Last night was a night of pies in our house.  We tried out another recipe from this book: Chocolate Cheesecake Pies.  So yummy! The key to these, we found, is to stick them in the fridge for a while before you eat them.

With a few mini chocolate chips on top for garnish, they looked pretty too!


Abigail Johnson Dodge's Chocolate Cheesecake Pies
6 oz Cream Cheese, at room temperature
5 Tablespoons granulated sugar
2 oz. Bittersweet chocolate, melted
1 Large egg yolk
3/4 Teaspoon pure vanilla extract

To make the filling, in a bowl, combine the cream cheese and sugar.  Using an electric mixer, beat until well blended and smooth.  Add the melted chocolate and mix until blended.  Add the egg yolk and vanilla.  Beat until just blended.  Dump in pie crusts and bake until crust is golden brown.
